my go-to, if i have the time, is spinach & feta cheese in phyllo dough triangles (spanikopita). the kids love the phyllo dough so much, they usually don’t notice the spinach!

I once read hummus is one of the best foods for kids, so I make mini pita mediterranean sandwiches with hummus and babaganoush. I make my own hummus and babaganoush so I can add basil, roasted peppers and roasted garlics in lower quantities so they don’t notice these additional flavors. My 19 month old LOVES hummus!!
